Sparklin’ Blueberry Muffins
My mom was an incredible cook. She used to bake Bostonian Blueberry Muffins for our family. They were so delicious – especially when they were hot out of the oven and spread with butter.
I tweaked her recipe just a bit and came up with a muffin that has a fresh twist to it.
These beautiful muffins are soft, tender, and bursting with healthy blueberries. Enjoy!

Ingredients
- 1 1/2 cup Blueberries
- 2 Eggs
Dry Ingredients
- 2 cups Flour
- 3/4 cups Sugar
- 1 tablespoon Baking powder
- 1/2 teaspoon Salt
- 1/2 teaspoon Cinnamon
- 1 1/2 tablespoon Sparkling decorator's sugar (reserved)
Wet Ingredients
- 1/4 cup Butter (melted)
- 1/2 cup Milk
- 1/2 teaspoon Vanilla
- 1/4 teaspoon Almond extract
Directions
Preparation | |
Heat oven to 425 degrees. Butter muffin cups or use cupcake liners | |
Dry ingredients | |
Combine dry ingredients, except 1 1/2 tablespoons decorator's sugar. | |
Toss 1 tablespoon of dry ingredients with the berries in a separate bowl. | |
Wet ingredients | |
Melt butter. After it's cooled, stir in milk, then eggs, vanilla, almond extract, and orange zest. | |
Muffin batter | |
Add egg mixture to dry ingredients and stir well. Add berries. Stir gently to combine. | |
Fill muffin cups to the top and sprinkle with sparkling sugar. | |
Pop into your preheated oven and bake for 15 minutes. After removing from the oven, let muffins sit in the pan for another 5 minutes then remove. |
