Chocolate Chip Oatmeal Cookies with Toffee Bits and Flax

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup real butter (softened (1 stick))
  • 1/2 cup shortening
  • 3/4 cups sugar
  • 3/4 cups brown sugar
  • 1 teaspoon vanilla extract
  • 2 Large eggs
  • 3/4 cups semi-sweet chocolate chips
  • 3/4 cups white chocolate chips
  • 1/2 cup Heath chips
  • 3/4 cups oatmeal
  • 1/4 cup milled flaxseed

Directions

Stir dry ingredients (flour, baking soda, and salt) together in a bowl. Set aside.
Preheat oven to 375 degrees F.
Add eggs one at a time. Beat well after each.
Beat butter, sugars, and vanilla together in a large mixing bowl.
Add oatmeal and flax seed. Mix on medium speed.
Add semi-sweet chocolate chips. Mix on low speed or stir.
Add white chocolate chips. Mix on low speed or stir.
Add Heath chips. Mix on low speed or stir.
Shape dough into tall-ish columns and place on ungreased cookie sheet.
Bake for 10-12 minutes based on the size of your cookies. After removing from the oven, allow them to sit on pan for two minutes. Remove and allow to cool on wire racks.
Store in airtight container - if you have any left!

Tip

Using real butter creates a better flavor. A little shortening in combination with the butter creates a plumper cookie. Forming the dough into short columns instead of drops also helps with plumpness.
