Chocolate Chip Oatmeal Cookies with Toffee Bits and Flax
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup real butter (softened (1 stick))
- 1/2 cup shortening
- 3/4 cups sugar
- 3/4 cups brown sugar
- 1 teaspoon vanilla extract
- 2 Large eggs
- 3/4 cups semi-sweet chocolate chips
- 3/4 cups white chocolate chips
- 1/2 cup Heath chips
- 3/4 cups oatmeal
- 1/4 cup milled flaxseed
Directions
Stir dry ingredients (flour, baking soda, and salt) together in a bowl. Set aside. | |
Preheat oven to 375 degrees F. | |
Add eggs one at a time. Beat well after each. | |
Beat butter, sugars, and vanilla together in a large mixing bowl. | |
Add oatmeal and flax seed. Mix on medium speed. | |
Add semi-sweet chocolate chips. Mix on low speed or stir. | |
Add white chocolate chips. Mix on low speed or stir. | |
Add Heath chips. Mix on low speed or stir. | |
Shape dough into tall-ish columns and place on ungreased cookie sheet. | |
Bake for 10-12 minutes based on the size of your cookies. After removing from the oven, allow them to sit on pan for two minutes. Remove and allow to cool on wire racks. | |
Store in airtight container - if you have any left! |
Tip
Using real butter creates a better flavor. A little shortening in combination with the butter creates a plumper cookie. Forming the dough into short columns instead of drops also helps with plumpness.
