Apple Pie Pancakes Recipe

Hi and welcome to the Warming House! Today I’m serving up a delicious pancake recipe. The spicy sweetness and moist texture will make you stack them high on your plate, then go for more!


I made these last night after spending the entire day helping my son with a basketball injury. To be honest, I enjoyed getting to spend the day with him – even though it wasn’t a happy circumstance.


After a doctor’s exam, an appointment to get crutches, then another appointment for an MRI, we headed home late in the day. As we drove, my mind turned to dinner. What was I going to make? I hadn’t been able to make it to the store to restock. Comfort food sounded perfect, so I made breakfast for dinner. (One of our favorite things!) The added bonus is that it was quick, easy, and I had all the ingredients I needed in my pantry. Yay!

On the menu were these Apple Pie Pancakes.

To make them, you’ll need:

1 1/2 cups flour

1/4 cups chopped pecans or walnuts (optional)

2 teaspoons baking powder (makes them nice and fluffy)

1 teaspoon apple pie spice

a pinch of salt

1 cup fat free milk

1/4 cup brown sugar, packed

1 tablespoon vegetable oil

1 teaspoon vanilla extract

2 large eggs

1 cup apple butter


Combine the first five ingredients in a large bowl. (Reserve half of the chopped nuts for garnish – if you’re using nuts).


Add milk, brown sugar, oil, vanilla, and eggs.


Beat until well mixed.


Stir in apple butter until well combined.


Spray a non-stick pan lightly with cooking spray and heat over medium heat. Pour about 1/4 cup of batter onto pan per pancake.

*For perfectly shaped pancakes, use a round cookie cutter. Lay on pan. Give it a quick squirt of cooking spray. Pour batter into mold. Let it set up a bit. Remove mold carefully. Don’t burn yourself!


Turn pancakes after bubbles have popped up all over the top and the edges look cooked.

Serve with a sprinkling of nuts (optional), and drizzle with syrup. Some candied apple peel would also be a great garnish.

(You can change this up by substituting 1 teaspoon pumpkin pie spice and 1 can pumpkin puree in place of the apple pie spice and apple butter.)

Makes about 12 large pancakes.
